Food Blog!

Bacon wrapped chicken stuffed with spinach, mushrooms, gorgonzola cheese and carrots!

Why is it every time I watch "No Reservations" I have to make a big elaborate meal the next day? Oh well, I took some random "Bacon Wrapped Chicken Breast Appetizers" recipe from the internet and made 3 or 4 substitutions. The original recipe had feta cheese instead of gorgonzola and no mushrooms for instance.

Nom nom nom. Here's about everything minus the chicken. Why didn't I think to cook the chicken with a little beer? Next time.

Chopped up.

Stuffed. As you can see, these aren't really appetizers. Then I cooked 3 breasts in the oven at 425 for 20 minutes before I put it on the stove top.

After 20 minutes look how uncooked this bacon looks! Dangerous stuff. I cut open the chicken and tried a bite to make sure it was done then crisped up the skin and bacon wrap.

 Voila! (Which is french for "ta-dah!)

And then you've got to have strawberry banana pound cake ice cream with angel food cake and chocolate, of course.

Thoughts: Delicious. Next time I'd use feta cheese instead of gorgonzola and more of it.
Maybe some kind of sauce? The next day I had another one of these w/ spicy BBQ.
